The Best Swedish Pancake Recipe
This Swedish Pancake recipe is close to my heart! It is one of my late Grandma Joanie’s recipes. My grandfather and grandmother would let my cousins and I spend the week with them. Some of my best memories were made there! We would swim in the pond all day, ride our bikes around, and then stay up late watching movies and laughing. In the morning, she would make these for us. They were such a treat!
What is a Swedish Pancake?
If you have never had a Swedish Pancake, then I would say that it is similar to a crepe. However, they are lighter and fluffier than a crepe. It is a very thin, egg-rich pancake that you can add whatever your heart desires onto. I prefer sugar and pure maple syrup on mine. I also enjoy spreading jelly in mine and sprinkling the top with sugar. Some other options we have tried are fresh fruit, cinnamon & sugar, and homemade fruit sauce with cool whip. If your taste buds prefer more savory food, you could do omelet style ones. You can spruce this up however you like!
Swedish Pancake Recipe
What you will need:
3 eggs
1 Cup Flour
1 3/4 Cup Milk
1 tsp. salt
1 tsp. sugar
1 tsp. melted butter
Fillings: Jellies, maple syrup, sugar, fruit syrup, or anything else your heart may desire.
Instructions:
Crack eggs in a large bowl. Beat well. Add remaining ingredients and mix. The mixture will be thin. Pour a small amount of batter on a hot pan. You will want to move the pan around to spread the batter. You want this to be thin. Don’t worry about the chunks. You will not see or taste them in the final product.
These go quick. Get your spatula ready! You want the one side to be slightly browned. You will notice that the sides start to look crisp and flip-up. That is always a good indicator. Flip the pancake.
Flip it to brown the other side.
This is how mine typically look. They have some brown but are still soft.
Time for the Fun Part! Toppings!
This is the fun part! Add your favorite toppings. As a kid, I would sprinkle sugar on the inside and then pour some maple syrup on the pancake, roll it up, and sprinkle more sugar on top. We also would spread jam on the pancake, roll it up, and then sprinkle sugar and maple syrup on it; that is delicious too.
To make an easy fruit sauce, throw some frozen fruit in a saucepan. Add a little water if needed and you can add sugar, maple syrup, or honey to sweeten it. Bring to a boil for a few minutes to soften, press the fruit with a potato masher, and boil until you get the thickness you desire. I used frozen blueberries, frozen whole strawberries, and added maple syrup. Yum! Top with Cool Whip to make a scrumptious breakfast.
As an adult with a desire to be healthier, you could fill this with fruit or veggies. In the picture below we sauteed green peppers, onions, cut link sausage, and then scrambled some eggs into in towards the end. It was delicious and filling.
But typically, when I make these it is to remember my childhood and share this special tradition with my children.

- Spray a frying pan with cooking spray. Pour a small amount of batter on a hot pan. You will want to move the pan around to spread the batter. This to be thin. Don’t worry about the chunks. You will not see or taste them in the final product.
- These go quick. Get your spatula ready! You want the one side to be slightly browned. You will notice that the sides start to look crisp and flip-up. That is always a good indicator. Flip the pancake.
- Lightly brown the other side. Take off heat and make another one.
- Now it's the fun part, filling the Swedish pancake! Some ideas for filling are to sprinkle sugar on the inside and then pour some maple syrup on the pancake, roll it up, and sprinkle more sugar on top. You could also spread jam on the pancake, roll it up, and then sprinkle sugar and maple syrup on it. You could also fill this with fresh fruit or veggies for a healthier option. Get creative and enjoy!

My Dad often makes these on Sunday morning for breakfast. We always ate them with applesauce or fruit inside, rolled up with cool whip on top. Yumm!
